Ha Ha That is a good question. Probably nothing really needs to be refrigerated but they just have to cover their corporate buns in case someone gets sick.
If it is on your cupcakes that you let sit out and something happens they don't care!
Same thing with Pumpkin Pie - you are supposed to refrigerate that but the ones in the bakery at the store sit out for days....even weeks. I asked the bakery lady one year. She said it was because they didn't put any dairy products in it and it had lots of preservatives. Ha ha The bakery pie basically sucks! Ha
Anyway, I'm a little talkative tonight. I just wanted to tell you that you are a great mom for letting your daughter learn and have fun - Love her cute cupcake!

If you put the opened frosting back in the cupboard, you might forget about it for a few weeks. By that time the frosting will be bad. But you're going to eat the cupcakes within a few days (or hours at my house). So, to preserve your opened can of frosting, you should refrigerate it.

I just made that up, but it sounds like it could be true!

My question is - why does it seem there is never quite enough frosting? The container needs to be a smidge bigger - probably so that I have to buy two of them. The cupcakes sure look good!

This germaphobe refrigerates cupcakes if it is more than a day. I'm assuming the milk and butter are the problem (at least in homemade frosting?). My grandmother leaves her butter out on the counter at all times. Freaks me out.
